Have you had any matcha sweets? Have you made them by yourself? What I love about matcha sweets is I can enjoy a nice flavor of matcha and also enjoy sweet and bitter at the same time. I think bitter taste brings out the sweet flavor. 

I felt like having matcha cake with a rich taste. Also I wanted to make a simple recipe. I tried making it a few times and I got an idea to bake with white chocolate!! I think matcha goes very well with white chocolate!

 

I used this matcha for the cake. 

 

 

Kanes Tea Factory #08: Unsweetened Matcha - Yuzu 抹茶 柚子美人 30g

 

柚子 (Yuzu) is a type of Japanese citrus fruit. There is just a little natural yuzu peel powder in the matcha. You will feel a flavor of Yuzu when you bake.  Please try it if you would like to add a refreshing citrus aroma with the brownie!! 

It is no problem to use any matcha at home. I am happy if you would bake it and enjoy the rich taste.

 

MATCHA WHITE BROWNIE RECIPE 

INGREDIENTS

[ For 20cm x 20cm (8in x 8in) tin ] 

 

60g / 2.1oz       plain flour  

20g / 0.7oz       matcha

2                        eggs

80g / 2.8oz      sugar                   *1

150g / 5.3oz    white chocolate

50ml                 oil                       *2

60g / 2.1oz       walnuts

 

*1 any sugar is fine. きび砂糖 (Kibizatou) -unrefined cane sugar is used in this recipe.

*2 菜種油 (Natane Abura) - rape seed oil is used in this recipe. You can use any oil such as sunflower seed, corn oil, peanuts oil, safflower oil, cotton seed oil etc...except for having a strong flavor oil. 

 

 

 

 

 

PREPARATION

Shift the flour and matcha together.

Break up the chocolate.

Roast the walnuts and chop finely.

Pre-heat the oven to 160 ℃ / 320F.

 

METHOD

1 Whisk the eggs and sugar together in a bowl. 

 

 

2 Put the broken-up chocolate and oil in a bowl over a bowl containing warm water, without the bowl touching the water. Stir until it has melted. 

 

 

3 Add the mixture of chocolates and oil into the bowl of the mixture of eggs and sugar and stir well. 

 

 

4 Add flour and matcha into the bowl and mix lightly with a rubber spatula and then add walnuts.

 

 

 

 

5 Pour the mixture into the baking tray lined with greaseproof paper.  (It is also fine to grease the tray and pour the mixture into the tray.)

 

6 Bake for 20 minutes until springy in the middle.
