Chili pepper, or togarashi in Japanese, has been a part of Japanese cuisine since Portuguese traders introduced it in the 16th century. There are dozens of varieties of chilli pepper, but just 1% of the chilli pepper consumed in Japan is grown in Japan. This kyoto-grown ichimi (一味 literally "one flavor") is often used on noodles, etc. and tends to be less spicy than forms found in other parts of the world.
